Award winning chefs from across Texas brought the heat, in more ways than one, as they competed against one another to present the best dish of the night, which was voted on by attendees. Each chef was paired with a Winery partner to use as inspiration and compliment their dish. The evening acted as a progressive dinner, with guests sampling bites and wine made from 100% Texas grapes. After savoring each dish, guests were invited to vote for their favorite in multiple categories like “best paired dish” and “best overall.”

  • Known to many as Chef Rosh

    Chopped Champion, Hells Kitchen survivor and Beat Bobby Flay competitor. And most recently went against Iron chef with hit show Alex Vs. America

    She started in the industry at 13 years of age and hasn't looked back. After graduating culinary school she packed up to work and travel the world and learn about different cuisines and cultures. Her work has taken her to India, Thailand, UK and Europe before she made her way back to USA.

    She has multiple international and national awards as well as a James Beard Alumni Chef, cook book author and board member for SabesWings and I'll have what she's Having. Her her spare time she participates both nationally and internationally with various charities and non profits.

  • Chef Cibelli has gone from a wee little thing standing on a chair at the stove of her mother, grandmother, and two great-grandmothers; to a multi-faceted small business owner with her “Sinatra Style”. From college to culinary school, to restaurants, to culinary school profession, and private chef. Born and raised in New York, Chef Cibelli moved to Texas to enjoy that southern life and disrupt the local culinary scene with some good trouble.

  • Originally from Texas, Executive Chef Austin Simmons took to the toque at the tender age of eight. As a child growing up in Arlington, Texas, he bonded with his mother while they made dinner together after she arrived home from her first job of the day and before departing for her second.

    In 2018 Tris elevated the dining scene in The Woodlands Waterway square. Named after his beloved daughter, everyone from his team to restaurant guests is treated like family.

    Adamant in wanting to tell a story through his cooking, Simmons is very simplistic in delivery using light, but flavorful ingredients that allow the natural flavors of the food to express themselves.

  • Born in Minneapolis, Evan Michels calls Chicago home prior to putting down roots Texas in 2019. Evan studied culinary arts at the Culinary Arts College at Dupage. Chef Evan’s passion for learning took him next to Tuscany where he spent three months immersing himself in Italian food and culture while attending the rigorous Scuola Internazionale di Cucina Italiana. Thomas Keller, Anthony Bourdain, Rene Redzepi, and Marco Pierre White have inspired Chef Evan’s culinary career.

    Chef Evan served as Corporate Chef for twenty two Marriott properties around the globe for two years. During that time, Chef Evan took Runner-up in Marriott's first company wide Master of the Craft Competition '17. Chef Evan joined the Side Street Hospitality Culinary team in April 2021. His culinary talents and leadership skills, especially his ability to stay calm amidst chaotic situations, have made him an integral part of Side Street Hospitality.

  • Hola my name is Luis Villalva.

    I was born and partly raised in the busy streets of Mexico City, I have Michoacan roots from my maternal grandparents but we are all Chilangos at heart.

    My love for tacos started since my mothers womb since that was the way my parents made a living. They used to have corner taco stands-therefore I started working in the taqueria scenario at a very young age from prep to restocking ingredients.

    I moved my life to the USA at the age of 16 where I immediately started working in the restaurant industry as well as attending high school. After graduating and forming a family I decided it was time to bring to Dallas the foundation of my family in Mexico a Mexico City style taqueria.

    Come Taco is a concept that represents the unity that food brings to a family from my mother preparing, to my father and sons helping with caterings, to my wife and sister working the counter and my brother running the bar side, we always stick together to have a welcoming feeling to our premises and keep the freshness of Mexico City in Dallas.

    Our love of and passion for Texas Food & Wine is what inspired us to build this destination. We know wine, especially Texas Wine. We are built on the foundation of our love of quality and classic Texas Food. We grew up on the best Texas flavors from tender cuts to queso to fresh fish. Nothing but the best of Texas.

  • Matt Church has been cooking in the Texas Hill Country for 15 years, the past 10 years have been based in Hye, Texas. In 2022, Matt had the opportunity to start Church, a food truck with friend-and-now-business partner Aaron Wilson.
